Humble Crumble Pie

So easy to make, if a bear stole your fresh baked pie cooling on the windowsill, you'd have time to make another one before the conservation officer came round to take your complaint.

Filling Ingredients:
1-9" deep dish pie crust
5 large apples, peeled, cored and sliced
1/2 c. white sugar
1 tbsp. cinnamon

Topping:
1/3 c. white sugar
3/4 c. flour, unbleached or whole wheat
1/2 c. uncooked oatmeal
5 tbsp. butter or margarine
1 tbsp. cinnamon
1 tsp. vanilla extract

Preheat oven to 400f. Lay apple slices in unbaked pie shell. Mix sugar and cinnamon, and sprinkle on top.

Mix topping ingredients till crumbly. Spoon mixture over apples and press down with hands. Bake in convection oven at 400f for 20 min., then reduce to 300f for 40-45 min (maybe a little bit longer in a standard oven). Pie is done when apples are soft and top is lightly browned.
